A Bandit Friendly Recipe (simple enough even for those less savvy in the kitchen)
2 pounds ground beef
2 eggs
1/2 cup bread crumbs
fresh spinach (I ususally use the bagged kind-about 3/4 of the bag)
sliced mushrooms (I usually use a whole container)
salt and pepper to taste
Puree the spinach and mushrooms and set aside
mix the rest of the ingredients and mix thougroughly, fold in the pureed mushrooms and spinach
Bake at 350 until done (use a meat thermometer, or cut in half like I usually do! lol)
This meatloaf bakes up moist and juicy....goes down great for the Lap Banders
I serve this up with mock mash potatoes (mashed cauliflower) for myself, and potatoes for the rest of the family
